Process
XO is made from rums distilled on a combination of traditional column and a double retort pot stills. Not just a variety of stills, but casks too - as Ex American Whiskey, Bourbon, and cognac casks were all used.
People
John Sober purchased the Mount Gilboa Plantation in 1747 and charged friend Sir John Gay Alleyne to become its manager Having proved so effective at leading the company it was renamed in his honour after his death. Today it's owned by Remy Cointreau.
Place
Mount Gay Rum is produced by Mount Gay Distilleries Ltd. of Barbados, the easternmost island of the West Indies. The oldest surviving deed for the company is from 1703, making Mount Gay Rum one of if not THE world's oldest commercial rum distillery.
