Winemaking
Grapes are hand-picked and then cold soaked for two days to enhance extraction of colour. Free juice is then separated from the press and allowed to settle prior to malolactic fermentation. The wine is then aged for eight months in French and American oak barrels (of which 25% new and 75% old).
