The grapes are hand-picked and then cold soaked for two days to enhance extraction of colour. Free juice is then separated from the press and allowed to settle prior to malolactic fermentation. The wine is then aged for eight months in french and american oak barrels (of which 25% new and 75% old). , which promoted a seamless integration of wine and oak. The wine was aged sur lie to create a round, soft mouthfeel, and the majority of the wine was racked in March to form the base of the wine before the blend returned to barrel. Barrel ageing over eight months using new and used French and American oak barrels imparted sweet aromas of vanilla and caramel framed by hints of toast and roasted nuts.
