This is the fruit of a single vineyard at Imerovigli village, planted with Assyrtiko vines aged 60 years or more. It has intense aromas and flavours of lemon and green peach, with an initially lean texture giving way to an eked-out richness. There are suggestions of grapefruit-pith bitterness and olive-brine salinity, and an overall impression of the stones and rocks of the arid place that gave rise to it. This is capabe of ageing 10+ years.

Winemaking
Grapes are harvested at full maturity then very gently pressed in a pneumatic press over 6 hours. Vinified in stainless steel tanks, under controlled temperatures. The wine then remains on its lees for 18 months in the tank before bottling. Only 6,000 bottles made of the 2020 vintage.
