Winemaking
Harvested by hand in small open crates to preserve the fruit’s integrity. Grapes are hand-sorted in the vineyard and winery. Maceration and vinification of free-run juice take 2–3 weeks with indigenous yeasts, temperature controlled. Daily pigeage early, then remontage until fermentation ends.
