Cuvée Brut Mosaic Signature undergoes a full 5 years’ maturation, leading to aromas that unfurl gorgeously from the glass, with baked apple, pear tarte tatin brioche, hazelnut cream and dried flowers. On the palate, it is fresh, rich, lush and juicy with flavours that echo the nose. It has a long, lively finish, with mineral and citrus character.

Winemaking

Cuvée Brut Mosaic Signature undergoes a full 5 years’ maturation, during which the Champagne mellows and the bubbles are perfected. The maturing period for champagne is one of the longest in the world and is crucial to the final quality of the wines. The wine is laid down in the cellars to start the process whereby the effervescence is created and mature slowly on lees.
