Grapes undergo temperature-controlled fermentation in stainless steel for approximately 15 days, with maceration and frequent pump-overs to extract colour, flavour and tannins. The wine matures for several months in concrete tanks before bottling, preserving its vibrant fruit, smooth structure and characteristic liquorice finish.
