Winemaking
Hand-picked into 15kg crates, the grapes are destemmed and cold-macerated below 8°C to preserve fruit expression. Gently pressed and racked, the must ferments for 14 days with selected yeast in stainless steel. The wine then rests on fine lees for 3 months with bâtonnage, enhancing richness, body and aromatic intensity.
