Savoury notes are clear as you'd expect for a gin with so many herbal botanicals, but the clever thing about this gin is the citrus (both peel and myrtle) that livens up profile. Great in a G&T with rosemary to garnish, best in a Gibson Martini.
Process
Olive Leaf Gin is made with a big base of juniper, overlaid with coriander seed, rosemary and bay leaf. Olive leaf tea, olive oil, lemon myrtle, macadamia, orris root, fresh lemon and grapefruit are also in the mix.
People
Four Pillars Gin was created by wine making and marketing duo Stuart Gregor and Cameron Mackenzie, along with brand guru Matt Jones. The trio united over a core objective: to create Australia’s best craft spirits.
Place
The gin may be made just outside Melbourne but by using botanicals like rosemary and bay leaf, it transports you to the Mediterranean. The clever use native macadamia nuts and lemon myrtle give the gin distinctly modern Australian twist though.
