Winemaking
Fincas Notables: Single Vineyard wines from Calchaqui Valley. Manual morning harvest, best rows are selected. Pre-fermentation maceration in French oak, then fermentation at 26°C-30°C with indigenous and selected yeasts. Malolactic in new French oak barrels, 15 months ageing. Light filtration before bottling, aged 6 more months.
