Winemaking
Our team of oenologists, led by Federico Riolfo, follows a natural winemaking philosophy focused on authenticity and minimal intervention. We avoid the use of fining agents, except for natural bentonite derived from chalk. Fermentation is carried out using only indigenous yeasts, while the use of sulfur dioxide is kept to a strict minimum.
