Expect a complex mix of cooked agave and oaky caramel notes from the time spend resting in oak. While designed to pair with tonic, with the underlying citrus, vegetal character and slight smoke, we prefer using it in a Paloma.
Process
El Rayo is made from a blend of highland and lowland 100% blue agave, grown for over eight years. The piñas are roasted for 12 hours before being shredded and fermented. It's then twice distilled and aged for around 7 months in American oak barrels.
People
El Rayo was created by Peckham-based Londoner's Tom Bishop and Jack Vereker who worked with Maestro Tequilero Oscar Garcia to produce their vision of a unique and modern tequila.
Place
The brand’s name "El Rayo" (lightning), alludes to the famous Mexican folk tale of lightning striking the blue agave. According to folklore, the cooked agave plant was discovered and tequila was born.
