Winemaking
After harvest, the grapes are destemmed and fermented for 4 weeks, followed by malolactic fermentation. Extraction is enhanced with twice-daily manual pump-overs and punch-downs. The wine is then aged for 1 year in vats, 18 months in bottle and can be cellared for up to 5 years.
