Process
The flagship Edinburgh Gin – packed with the likes of mulberries, pine buds and lavender – forms the base here, but instead of cutting it back with sugar and water, the Edinburgh Gin team add a rhubarb and ginger post infusion at full strength.
People
Edinburgh Gin was founded by former drinks retailer Alex Nicol, who – along with his wife Jane – was inspired to create his own. Gin. Head Distiller David Wilkinson now leads the distilling team in developing their range of contemporary gins.
