Winemaking
The three varieties are machine harvested for gentle skin contact; Gewürztraminer gets a further 20-24 hours after crushing before pressing. Co-fermentation in temperature-controlled inox uses indigenous and selected yeasts to develop and protect aromas. No fining is used, with only minimal SO2 added before bottling.
