Winemaking
The grapes undergo a cold, pre-fermentation maceration for four days, to encourage the extraction of vivacious, fruity notes into the wine. Temperature-controlled fermentation takes place in stainless steel cuves over 10 days, with gentle extraction through limited pumping-over. Separation from skins is performed at moderate pressure in pneumatic press, after which malolactic fermentation takes place, before the wine is aged in tanks for eight months.
