Winemaking
After direct pressing, alcoholic fermentation begins at 18°C and is stopped in the liquid phase by adding neutral alcohol. The wine is 15% ABV with 114.5g/L residual sugar. Natural fruit sugars are retained, with fortification timed to achieve a doux or demi-sec style, while maintaining the required 15-18% ABV.
