From a low-yielding, dry-farmed old vineyard, planted in 1955, this wine is a 'field blend,' composed principally of Carignan, with a little Cinsault and Malbec, all grown on bush vines. It has awesome complexity and attractively mature aromas of fragrant cedar wood, brambly fruit and black pepper. In the mouth, there is lovely, supple tannin and a sense of fresh vibrancy, in spite of its maturity. It has a beautifully-sustained, lingering finish. Superb.

Winemaking
The grapes are destemmed and the whole berries (no crushing involved) are gently placed in tank, undergoing cold maceration for seven days. Alcoholic fermentation is spontaneous, once finished the wine was left in contact with the skins for 20 days before being racked into 5,000 lts Foudres where it was aged for two years.
