Winemaking
Gentle extraction was achieved with two pump-overs per day, increasing as needed to introduce more oxygen when required. Dried stems were reintroduced into the ferment for added aromatic complexity and a perfumed character. After fermentation, the wine was pressed off and matured for 8-10 months in a combination of barrels and ceramic clay amphora.
