Winemaking
Whole berries are hand loaded into small format fermentation bins and 225-500 litre barrels; lots from each vineyard are treated individually; fermentation lasts for 10-20 days and a total maceration of 10-22 days with wild yeasts. Full malolactic fermentation. Aging of 12-18 months using 1st, 2nd and 3rd use barrels.
