Process
Piñas are cooked in Steam autoclaves, before being fermented and distilled on pot stills. Once aged in oak casks, the tequila is carbon filtered to remove the colour, while keeping many of the key flavours.
People
Butterfly Cannon was created by drinks mavens Biggar & Leith (Hotel Starlino, Stambecco, Shanky's Whip), and the tequila is made under contract by well known producers Destiladores Del Valle de Tequila (Nom 1438).
Place
Destiladores Del Valle are based in Jalisco, while the brand looks to further links to Mexico by donating funds to Monarch Butterfly conservation. The butterfly migration between the countries is one of the most impressive in the natural world.
