Winemaking
Small, concentrated bunches were hand-picked and whole-bunch pressed, with juice run straight to oak on full solids. Native yeast fermentation took place in French oak barriques (around 40% new). Batonnage was guided by flavour, with no MLF to preserve natural acidity. The wine was racked to tank in November and bottled in January 2024.
