Noilly Prat History

Founded in 1813, Noilly Prat has etched its mark in history as one of the first and most iconic French vermouth makers. Joseph Noilly, the creator, developed an innovative and unique aging process, setting the standard for modern vermouth.

This family-owned business, based in Marseillan, southern France, was later consolidated by his son, Louis Noilly, and son-in-law, Claudius Prat. Over the years, the brand has become synonymous with quality vermouth, gaining international recognition for its distinct flavour and refinement.

How is Noilly Prat Vermouth Made?

Noilly Prat Vermouth is created by picking carefully selected fine white wines, primarily Picpoul and Clairette, which are aged separately in Canadian oak barrels for one year.

The wines are then blended with a secret combination of herbs and spices from around the world. This blend is further aged outdoors in oak casks, exposed to the natural elements of the South of France, adding to its distinctive flavour profile.

What is dry vermouth?

Dry vermouth, often referred to as 'French Vermouth,' is a type of fortified and aromatised wine characterised by its pale colour and dry slightly bitter taste. It has less sugar than sweet vermouth counterparts (thus the dry) but the bittering agent is the same for both – Wormwood.

Noilly Prat Dry, with its balanced and dry characteristics, is a prime example of the genre and perfect for creating classic cocktails like the Martini.

Where is Noilly Prat Made?

Noilly Prat is made in the picturesque port village of Marseillan, located in the Hérault department of southern France. Production aside, for those keen eyed, look out for the art nouveau spiral staircase designed by Gustave Eiffel himself. It’s that kind of place – history looms large here.

Given the open-air maturation occurs in the yard, the unique coastal Mediterranean climate of this region also contributes significantly to the distinctive taste of Noilly Prat Vermouth.
