This is an unfortified white wine crafted from 100% Palomino grapes picked early to retain high natural acidity. The juice is fermented and aged on its fine lees without any fortification, flor yeast, or oak exposure. The wine is bottled un-fined and unfiltered, resulting in a minimal-intervention expression of the region.
