Winemaking
Syrah, handpicked in mid-April, 100% destemmed, fermented naturally in two clay amphorae. Daily plunging, four weeks on skins with no additions. Blended, aged in amphorae for 4 months, natural malolactic fermentation. Racked to steel for 2 weeks, bottled without stabilisation, fining, filtration, or added sulfur.
