The utterly succulent and elegant 2020 Barolo Cannubi offers appealingly complex aromas of fresh cherries, roasted chestnuts, seasoned oak and autumnal forest walks. On the palate, the tannins are fabulously silky, and the wine evokes a sense of gentle ripeness, while remaining precise and focused. The flavour concentration is channelled into long, lean persistence instead of obvious richness. Clearly from a warm, ripe year, it remains fresh and beautifully-balanced. Winemaking
Fermentation takes place in stainless steel using indigenous yeasts. The cap is emerged, with regular pigeage and remontage. The wine is aged for 24 months in French oak with light toasting. Roughly 30% is new. Minimal racking and no filtration to champion absolute complexity and structure. 1 further year is spent ageing in bottle prior to release
