Process
Molasses is fermented using use the same yeast strain first isolated in 1862. This is distilled using a parallel process, where two kinds of rum are made (a lighter one made using column stills & a heavier one is made using a single distillation).
People
Bacardi was founded in 1862 by Don Facundo Bacardí Massó in Santiago de Cuba, when he bought a distillery and revolutionised the rum-making process to create a smooth, light-bodied spirit and what the world now knows as Bacardi Rum.
Place
Now one of the largest privately held, family-owned spirits company in the world, their flagship rum is predominantly produced at Casa Bacardi in Puerto Rico, but also in Mexico and India.
