The Aussies get excited about their 'high grown' Shiraz, and this illustrates why. Silky and medium-bodied, with more guts than Pinot Noir, and yet also beautifully-balanced, harmonious and nuanced. There's complexity on the nose, with rich notes of date and dried fig, alongside black pepper, rusty iron, herbs and sunbaked earth, and it has a wonderfully rounded, velvety texture.

Winemaking
Fermented using wild yeasts and carefully selected cultures which promote fruit and spice character. Different parcels are matured between 12 and 18 months in French and American oak, to add complexity and contribute lovely vanilla notes. A dash of Cabernet Sauvignon is added to the final blend to add a black cherry lift.
