Winemaking
This wine goes through an extensive cold maceration of 2-6 days at less than 50oF (10oC) to extract aromas. The juice is then fermented for approximately 8-16 days with a total maceration of around 0-12 days. Ageing of 11-13 months in 100% French Oak barrel; 35% new barrels.
