Winemaking
This wine goes through an extensive cold maceration of 2-6 days at less than 50oF (10oC) to extract aromas. The juice is then fermented for around 14-20 days with a total maceration of approximately 3-10 days. Elevage: 11-13 months in 100% French Oak barrel. 30 – 40% new, second and third use barrels.
