Winemaking
This wine goes through an extensive cold maceration (50% whole cluster) of 3-7 days at less than 50°F (10°C) to extract aromas. The juice is then fermented for around 10-19 days with a total maceration of approximately 8-12 days. Elevage: 14-18 months in French oak barrel. 1-2 years old barrels.
