It is aged for 18 months on lees to develop creamy texture and delicate mousse while still maintaining bright, fresh apple, pear and quince aromas.

Made by the Cap Classique (traditional method), aged for 18 months on lees to develop creaminess and delicate mousse while still maintaining bright freshness. From mature, unirrigated vineyards, planted 1975, on Clovelly soil (deep yellow sand). Location: Helderberg, Stellenbosch.
