Winemaking
Traditional method, beginning with a pre-fermentative cold maceration for 2 days. Fermentation with native yeast. A maceration is carried out for 15 days in 20,000 L stainless steel vats. Malolactic fermentation takes place in second-use French oak barrels. Aged for 8 months on its lees in French medium-high toasted oak barrels with daily battonage.
