Winemaking
A combination of fruit from Drouhing family vineyard holdings and partner growers. Hand-harvested and selected into small crates, fermented using native yeasts with a portion of whole bunches (20%-50%, depending on vintage). Matured 16-20 months in French oak barrels, of which 30% are new.
