A Friuli trailblazer, Vittorio Puiatti created the no-oak “Metodo Puiatti,” ageing white wines solely in steel to preserve clarity, freshness and elegance.
A continuation of the pioneering vision established by Vittorio Puiatti, a key figure in the evolution of modern Italian white winemaking. Based in Friuli, the estate was founded on radical principles that challenged convention, led by Vittorio’s desire to produce pure, unadorned wines. Today, the Puiatti family continues to honour this legacy, maintaining a sharp focus on precision, clarity and varietal expression in their wines.
The hallmark of the Puiatti approach is the exclusive use of stainless steel for both fermentation and ageing—a method known as the “Metodo Puiatti.” This technique avoids oak entirely, preserving the natural freshness and aromatic purity of the grape. The cellar itself was designed to reflect this philosophy, constructed entirely from steel, concrete and glass. This minimal intervention style results in wines that are clean, crisp and distinctly expressive of their terroir, offering a modern yet timeless profile.
