Yealands has been set up to be one of the most sustainable wine producers in the world. Carbon Zero producer with the largest solar panel roof in NZ, vine pruners used for heat recovery, wetland biodiversity, and sheep used to trim vegetation.
Extremely clean, ripe fruit picked from our L5 Bock was de-stemmed, chilled and gently pressed off to settle in small stainless steel tanks for three days. The clear juice was racked off and warmed before beig inoculated with selcted yeasts. A long, cool fermentation took place over 20 days. Once fermentation was complete, the wine stayed on lees for seven weeks, with weekly stirring. The wine was then stabilised and filtered before bottling.
