Winemaking
From a vineyard in Gualtallary, Uco Valley, at an altitude of 1,350 metres. The soils are sandy, with high content of both calcium carbonate and pebbles. Harvested by hand with bunch selection in the vineyard. After de-stemming, individual berries are also selected. Grapes are chilled to 10°C before pneumatic pressing, and the must is kept at 10°C for cold-settling and racking of the gross lees. Fermentation takes place with wild yeasts at 15°C in 3000-litre concrete vats; after which the wine undergoes partial malolactic fermentation in oak casks. It is matured on the fine lees for nine months in 3000-litre French vats and 1000-litre concrete vats. Filtering. Bottling.
