The Finca Tomillo Chardonnay comes from the high-altitude Gualtallary district of Mendoza's Uco Valley, which is rapidly gaining a reputation for world-class white wines. It's a rich yet refined wine, with lemon, Chinese five spice and chicken broth notes - zesty and a little savoury at the same time. Since its early days, Trapiche has made extensive forays into terroirs that offer extraordinary potential for the crafting of unique wines, following a philosophy inspired by the richness of diversity. " This is really powerful and tightly structured with super depth and compression of fruit on the palate and some phenolic tension. This is made in concrete eggs and large casks. Purity is the word. Drink in 2022, but already superb. "
Winemaking
From a vineyard in Gualtallary, Uco Valley, at an altitude of 1,350 metres. The soils are sandy, with high content of both calcium carbonate and pebbles. Harvested by hand with bunch selection in the vineyard. After de-stemming, individual berries are also selected. Grapes are chilled to 10°C before pneumatic pressing, and the must is kept at 10°C for cold-settling and racking of the gross lees. Fermentation takes place with wild yeasts at 15°C in 3000-litre concrete vats; after which the wine undergoes partial malolactic fermentation in oak casks. It is matured on the fine lees for nine months in 3000-litre French vats and 1000-litre concrete vats. Filtering. Bottling.
