Whilst not yet fully organic certified, Thelema is a practising organic following a policy of minimum interference, allowing the wines to be a true expression of each vineyard.
The grapes are de-stalked, crushed, pressed, settled and then fermented in 2nd/3rd fill barrels french oak barrels. Fermentation is controlled at 15-16 degrees.
A perfect accompaniment to buttery fish dishes, bouillabaisse and mildly spicy dishes.
