The most herbaceous expression in The Lost Explorer range, Salmiana offers a sweet and spicy profile with hints of green chilli, grapefruit and finishes on a smokey note combined with the impression of fresh agave after rainfall.
Process
Salmiana is harvested after 12 years before being cooked using local recycled wood in earthen ovens, ground and macerated, fermented in open-top wood barrels and double-distilled in a copper alembic still.
People
The Lost Explorer, co-founded by David de Rothschild and Thor Björgólfsson. The duo work with maestro mezcalero Don Fortino Ramos, who has spent the last 40 years distilling mezcal, with an approach that's deeply in tune with the rhythm of nature.
Place
The Espadín, Tobalá and Salmiana expressions are distilled on the edge of San Pablo Huixtepec, Oaxaca, by Ramos and his daughter Xitlali. The team plant three new wild agaves for every one hand-harvested and never use insecticides.
