Naturally frozen Vidal grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration. The wine is aged 100% in stainless steel. Alcohol 11.0% Acid Level: 10.2g/l Sugar level: 216g/l
Serve chilled in small white wine glasses, 1 to 2 oz per person. During a meal with pâté or with foie gras for a mouth sensation. Also a wonderful companion to Indian curry dishes and spicy Asian cuisine. Serve with the cheese course which may includ e cheddar or creamy blue cheeses. After a meal with fruit based desserts of mango, pear, quince, sweet citrus and tropical fruits; crème caramel; crème brûlée; custards; and syllabubs. Vidal Icewine complements fruits such as peach, banana, cantalou pe, apricot, pear, apple, pineapple, mango and papaya.
