Winemaking
Fermented at around 15C in stainless steel using DV10 and EC1118 yeast. These yeast are specifically used for the production of sparkling wines. They are clean, strong and neutral fermenters that do not create unwanted fruity ester aromas in this wine style. DV10 used in the primary ferment and EC1118 used for the secondary ferment is where the bubbles come from.

Tasted this on a recent visit to Grandtully Hotel, by Ballintaggart and thoroughly enjoyed it. Would certainly recommend if you enjoy a wee prosecco, much better though
