Serve
There's a bright candied fruit nose of sweet banana. The sweetness carries into the palate with notes of passion fruit and marzipan. Del Maguey Wild Tepextate Mezcal Blanco is delicious sipped neat or in a slightly smoked and fruity Paloma.
Process
Tepextate has broad, twisted leaves about ten inches wide and grows at high altitude, emerging almost vertically out of rocks in the sides of mountains. After roasting for 15 days and a week long fermentation - it is distilled in copper stills.
People
Del Maguey was founded in 1995 by Ron Cooper. Every product in their collection is made by individual family palenqueros (producers) in old-style villages. They were one of the pioneers in crediting each product after the village where its made.
Place
A ‘single village Mezcal,’ Del Maguey Wild Tepextate Mezcal Blanco is produced in Santa Maria Albarradas, in the Sierra Norte region of Oaxaca.
