After being destemmed, the grapes underwent a very short cold maceration. Alcoholic fermentation is carried out with native yeasts and the total maceration process lasts for 40 days.
Bought this follow a review in the Guardian and wasn't disappointed. Fresh and vibrant fruit and a beautiful minerality it knocks socks off a Beaujolais Cru!
