Fresh apple cider notes are backed by floral honeysuckle on the nose while to taste, the fruit takes on a more toffee apple character. The finish is rich and warming with a hint of vanilla and peppery oak.
Process
Avallen is made with nothing but apples yeast and water and once distilled, it is aged for two years in French oak before being bottled with no added sugar, caramel or boisé.
People
Co founded by widely recognised drinks industry trade names, Stephanie Jordan and Tim Etherington-Judge, Avallen is made in the pesticide free region of La Manche, bordering Britany and Normandy at distillery Coquerel.
Place
Avallen takes its name from an old Cornish world meaning ‘Apple Tree’. Aval, meaning Apple, and Avalon ‘Island of Apples’. Co founder is from Cornwall, a land that shares many cultural and historical connections to Normandy.
